We select Angus crossed cows that are pasture raised then grain and grass finished which yield a lean yet flavorful quality meat. All calves are locally sourced and organically raised.
We use a "Salad Bar" finishing process that provide our cattle an all-they-can-eat buffet of grasses, legumes, grains and minerals.
Calves are processed at local USDA inspected facilities. Once the cow has been slaughtered the carcass will dry age for 14 days before butchering and packaging. Dry Aging improves the flavor and tenderness of the meat.
